Bukhari Rice (Ruz Bukhari)

There's nothing simpler than making a chicken and rice meal. There are a hundred different recipes and combinations with these two ingredients but this old traditional Middle Eastern meal has a fantastic blend of tasty spices and fragrant rice.

INGREDIENTS

  • 1 whole chicken, cut into serving pieces
  • 3 cups of basmati rice
  • 1 cup chick-peas
  • 2 medium carrots, chopped
  • 2 medium onions, chopped
  • 4 cloves garlic, crushed
  • 2 tablespoons mixed bukhari rice spices (includes: anise, fennel, wood cloves, cinnamon, and cardamom).
  • 2 tablespoons olive oil
  • 4 cups water
  • Salt (optional)

PREPARATION

  1. Boil chick-peas in water then set aside.
  2. Place rice in a bowl and soak for 20 minuets.
  3. Spice chicken pieces with 1 teaspoon burkhari spice mixture and salt. Place in a medium pot, add 1 cup water, bring to a boil, and let simmer over low heat for 10 minuets.
  4. In a skillet sauté onions and garlic in olive oil, cook 3-5 minuets then add to chicken along with carrots, stir occasionally until everything is well cooked,
  5. Add in chick-peas.
  6. Drain rice then season with salt and 1 teaspoons of bukhari spice mixture. Add to pot on top of chicken.
  7. Add 3 cups water, cover pot, bring to a boil, and let simmer over low heat for 10-15 minuets.
  8. Remove from heat and turn upside down over a large platter so that chicken is on top of rice.

For Bukhari rice spices you need equal amount of crushed anise, crushed fennel, crushed wood cloves, crushed cinnamon and crushed cardamom. The total should be 2 tablespoons for all spices.
