INGREDIENTS

  • 2 cups shredded carrots
  • 2 radishes, peeled and chopped
  • 1 cup (8 ounces) feta cheese, crumbled
  • 4 tablespoons lemon juice
  • 4 tablespoons olive oil
  • Salt (optional)

PREPARATION

  1. Combine carrots and radishes in a bowl.
  2. In another small bowl whisk lemon juice, olive oil, and salt together.
  3. Pour the dressing over the salad and toss to combine.
