Classic Lentil Soup

Lentil is a vegetable with one of the highest levels of protein. It is why it's a very important part of the diet in many parts of the world especially large vegetarian populations. Red lentils cook fastest because it's sold with the hulls removed. Enjoy!

INGREDIENTS

  • 1 cup red lentils, rinsed well
  • 1 medium onion, chopped
  • 1 tablespoon olive oil
  • 2 chicken stock cubes
  • 1/4 teaspoon chili pepper
  • 4 cups water

PREPARATION

  1. Place a large pot over medium-high heat and pour in the olive oil, then add onions and cook until tender.
  2. Add water and bring to a boil then add in chicken stock and season with chili pepper, boil for a few more minuets.
  3. Add in lentils, stir occasionally.
  4. Ladle soup into bowls and serve.
