Classic Vermicelli Soup

This classic pasta soup has about a hundred different versions of it all over the world. Homemade soups are not only better for you but they tend to taste better than store-bought ones with their fresh ingredients which are robust with distinct flavors.

INGREDIENTS

  • 1/2 cup vermicelli (thin spaghetti)
  • 4 cups water
  • 1/2 teaspoon dried mint leaves, crushed
  • 2 chicken stock cubes
  • Hand full of fresh parsley leaves, for garnishing

PREPARATION

  1. In a large pot add water and bring to a boil before adding in crushed mint, and chicken stock over medium-low heat, stir well.
  2. Add vermicelli to pot and stir well for 2 minutes.
  3. Cover and remove from heat and let it sit for 15 minuets, until vermicelli is well cooked.
  4. Ladle into bowls and garnish with parsley.
