Freekeh Soup

Native to Bilad al-Sham

Freekeh is a very popular soup especially in Jordan and Palestine. The unripe green wheat which is made from roasted green grains is delicious and highly nutritious. It is also low in starch and high in fiber, up to four times the fiber of brown rice.

INGREDIENTS

  • 1 cup freekeh (roasted green wheat)
  • 1 medium onion, chopped
  • 1 tablespoon olive oil
  • 2 chicken stock cubes
  • 1/4 teaspoon chili pepper
  • 1/2 teaspoon cinnamon
  • 4 cups water

PREPARATION

  1. Place a large soup pot over medium-high heat and pour in the olive oil, then add onions and cook until tender.
  2. Add water and bring to a boil then add in chicken stock and season with chili pepper and cinnamon, boil for a few more minuets.
  3. Add in Freekeh, stir occasionally.
  4. Ladle soup into bowls and serve.
