INGREDIENTS
1 whole chicken, cut into 4 serving pieces
2 cups green broad beans, trimmed and chopped
4 cups plain yogurt
1 egg
1 teaspoon cinnamon
1/4 teaspoon saffron
1 tablespoon flour
1 medium onion, chopped
1 tablespoon olive oil
1 cup water
Salt (optional)
PREPARATION
Heat olive oil in a medium pot and sauté onions until tender.
Add chicken pieces, salt, and 1/4 cup water, stir well over low heat.
Combine yogurt, egg, flour, cinnamon, saffron, and salt in a blender or by using a whisk, mix well.
Place mixture in a deep sauce pan, bring to a boil and let simmer over moderate heat, stir continuously.
Add green beans and 3/4 cup water to chicken pot. Bring to a boil and simmer over low heat until well cooked.
Add yogurt mixture to chicken pot, bring to a boil and simmer for 5 minutes.
