Broad Beans and Yogurt

Using fresh green beans gives you that extra flavor and fiber that makes this meal special. This hot meal is a creamy and spicy blend of fresh ingredients that you can make any day of the week. Nobody can really go wrong when it comes to chicken.

INGREDIENTS

  • 1 whole chicken, cut into 4 serving pieces
  • 2 cups green broad beans, trimmed and chopped
  • 4 cups plain yogurt
  • 1 egg
  • 1 teaspoon cinnamon
  • 1/4 teaspoon saffron
  • 1 tablespoon flour
  • 1 medium onion, chopped
  • 1 tablespoon olive oil
  • 1 cup water
  • Salt (optional)

PREPARATION

  1. Heat olive oil in a medium pot and sauté onions until tender.
  2. Add chicken pieces, salt, and 1/4 cup water, stir well over low heat.
  3. Combine yogurt, egg, flour, cinnamon, saffron, and salt in a blender or by using a whisk, mix well.
  4. Place mixture in a deep sauce pan, bring to a boil and let simmer over moderate heat, stir continuously.
  5. Add green beans and 3/4 cup water to chicken pot. Bring to a boil and simmer over low heat until well cooked.
  6. Add yogurt mixture to chicken pot, bring to a boil and simmer for 5 minutes.
  7. Serve and enjoy.
