This wonderful vegetarian appetizer can be served as a hot side dish or as a fresh raw salad. It's a practical and healthy dish that can be served with almost any meal. It's so easy to prepare that you'll want to make it for your next weeknight dinner.

INGREDIENTS

  • 1 medium green bell pepper, thinly sliced or 1/2 inch-dice
  • 2 medium tomatoes, diced
  • 3 cloves garlic, finely chopped
  • 2 tablespoons olive oil
  • 1 tablespoon fresh coriander (cilantro) leaves, chopped
  • 1/2 teaspoon salt
  • Pinch of chili pepper

PREPARATION

  1. Heat olive oil in a skillet then add garlic and bell pepper, simmer for 2 minuets.
  2. Add tomatoes, olive oil, coriander, salt, and chili pepper into the skillet, cook over medium heat for about 18 minuets.
  3. Serve immediately.
