Lemon chunks add a sour and zesty flavor to this crinkly cabbage salad. The mild taste of cabbage makes a stellar stand-in for lettuce and adds crunch and variety to any dish. Beyond the delicate flavor cabbage tends to hold flavor better that lettuce.

INGREDIENTS

  • 1 medium tomato, diced
  • 1 medium green bell pepper, thinly sliced or 1/2 inch-dice
  • 1 medium cucumber, diced into bite-size pieces
  • 1 small lemon, chopped
  • 1/2 cup scallions
  • 1/2 cup cabbage, shredded
  • 1/2 cup red cabbage, shredded
  • 1 tablespoon olive oil
  • Pinch of black pepper
  • Salt (optional)

PREPARATION

  1. Combine tomato, bell pepper, cucumber, lemon, scallions, olive oil, cabbage, and red cabbage in a bowl and season with salt and pepper.
  2. Toss salad and adjust seasoning before serving.
