Lentils are popular all over the Middle East and form the basis of many culinary dishes. This dish can be prepared with rice or wheat depending on your preference. It's also convenient because the ingredients consist of things usually kept on hand.

INGREDIENTS

  • 2 cups rice
  • 1 cup fine Turkish lentils, rinsed well
  • 4 tablespoons vegetable oil
  • 1/2 teaspoon chili pepper
  • 2 medium onions, sliced for garnish
  • 4 cups water
  • Salt (optional)

PREPARATION

  1. Place rice in a bowl and soak for 20 minuets.
  2. In a medium pot pour in 2 cups of water and lentils. Cover pot and bring to a boil then let simmer until lentils are well cooked.
  3. Drain lentils and rice then combine in medium pot with 2 tablespoons of vegetable oil, season with salt, mix well.
  4. Add 2 cups water, cover pot, and let simmer over low heat for 15 minuets.
  5. Serve on a large platter and garnish with onion slices.
