Japanese Okonomiyaki

Okonomiyaki is a Japanese dish consisting of a pan-fried batter cake and various ingredients. Okonomi means "what you like" or "what you want", and yaki means "grilled" or "cooked" (cf. yakitori and yakisoba). This dish means "cook what you like".

INGREDIENTS

  • 1/3 cup flour
  • 1/4 cup water
  • 1 egg
  • 1 1/2 cups shredded cabbage
  • 2 tbsp green onion
  • meat (thinly sliced beef, squid, shrimp)
  • mayo
  • katsuobushi
  • okonomiyaki sauce (3 tbsp ketchup, 1 tbsp soy sauce, and 1 tbsp Worcestershire sauce all mixed together)

PREPARATION

  1. Cut the green parts of your onions into small pieces. You won't use the rest for this recipe.
  2. Cut the cabbage into thin strips. Be sure to discard any thick white pieces like the one at the bottom. 1 1/2 cups, lightly packed.
  3. Mix the flour, water, egg and onions together. Only stir enough to combine. Add the cabbage and mix.
  4. Heat your pan to medium, butter, and arrange your meat. I would have put some shrimp here, but 4th of July weekend, the shrimp I like was wiped out
  5. Dump your mix on your meat and form into a disc.
  6. Flip when the bottom is golden brown, of if your camera fails, orange. When that side is done, move to a plate.
  7. Mix the ketchup, soy sauce and Worcestershire sauce in a small bowl or container. I'm not a big fan of sauces, I don't even use salad dressing, but I actually liked this! (I grilled the leftover parts of the onions and dipped them in the sauce
  8. Spoon some of the sauce into the corner of a baggy. Do the same with some mayo.
  9. Cut small holes in the corners of the baggies.
  10. Squirt the sauce and mayo in an S pattern across the okonomiyaki.
  11. If you want to be fancy, drag the blunt end of a knife across the sauce and mayo in straight lines. If you'd like, this is the time to add shredded nori and/or katsuobushi.
