INGREDIENTS
3 Potato , small size
1 Teaspoons lemon juice
1/2 cup fresh coriander (cilantro) leaves, chopped
3 Teaspoons olive oil
1 Garlic clove , crushed
salt (optional)

PREPARATION
Place potatoes into a large pot and cover with water, bring to a boil and cook over high heat for 35 minuets.
Drain water then peel and dice potatoes.
Combine diced potatoes with lemon juice, coriander, olive oil, garlic, and salt. Place in a skillet and cook for about 20 minuets over moderate heat, stir well.
