Potato Coriander

This tasty potato side dish is perfect to serve for lunch or dinner and also makes for a complete meal suitable for company when served with any kind of salad. The coriander-lemon combination is a delicious twist to this simple Middle Eastern dish.

INGREDIENTS

  • 3 Potato , small size
  • 1 Teaspoons lemon juice
  • 1/2 cup fresh coriander (cilantro) leaves, chopped
  • 3 Teaspoons olive oil
  • 1 Garlic clove , crushed
  • salt (optional)
  • water

PREPARATION

  1. Place potatoes into a large pot and cover with water, bring to a boil and cook over high heat for 35 minuets.
  2. Drain water then peel and dice potatoes.
  3. Combine diced potatoes with lemon juice, coriander, olive oil, garlic, and salt. Place in a skillet and cook for about 20 minuets over moderate heat, stir well.
  4. Serve and enjoy.
