Stuffed Potato

Stuffed potato is very delicious and appetizing recipe. This easy and flavorful dish is a family meal; it for all occasions or simply served when family gets together. Try this meal with rice on the side for a filling. So you might want to give it a try.

INGREDIENTS

  • 700g ground lamb
  • 8 small potato, peeled
  • 3 medium onion, chopped
  • 1 big chili pepper, chopped
  • 1/2 cup green peas, cooked
  • 1 chicken stock cubes
  • 1 teaspoon ginger
  • 1 teaspoon salt
  • 1 teaspoon cardamom
  • 1 teaspoon Shata (optional)
  • 1/2 cup olive oil
  • 1/2 cups water
  • Chopped parsley for garnish

PREPARATION

  1. Heat olive oil in a medium pot and sauté onion over low heat until well cooked.
  2. Add ground lamb, stock cubes, chili pepper, ginger, cardamom, Shata and salt stirring together well.
  3. Add cooked green peas stirring well until stuffing is cooked then turn of the heat.
  4. Scoop out the pulp from the potato. Fill the potato shells with lamb mixture until all done then place them in tray.
  5. Mix potato pulp with remaining lamb mixture and place them together with stuffed potato then drizzle them lightly with water
  6. Cover the tray with aluminum foil and place them in oven with 240°C until they're done
  7. Take out the tray and remove the aluminum foil then bake them again for few minutes
  8. Serve with rice and vermicelli and enjoy!
