Tabbouleh Salad

Here is a very simple to make salad that makes for a delicious lunch on its own. This popular dish is a zesty combination of vegetables, grain, and herbs with a decidedly traditional dressing that can go with almost any other kind of vegetable salad.

INGREDIENTS

  • 1/2 cup fine bulgur wheat
  • 1 medium tomato, seeded and diced
  • 2 medium cucumbers, chopped
  • 2 cups fresh parsley, chopped
  • 1/2 small head lettuce, chopped
  • 1/3 cup fresh mint leaves, chopped
  • 1/2 cup lemon juice
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 2/3 cup water

PREPARATION

  1. Boil water, pour into a bowl, and soak in bulgur wheat. Cover bowl and set for 25-30 minutes.
  2. Drain bulgur wheat and add tomatoes, cucumbers, parsley, lettuce, and mint leaves.
  3. Drizzle veggies with lemon juice and olive oil, season with salt.
  4. Serve immediately or refrigerate and serve cold.
