Turkish Vermicelli Soup

This vermicelli soup is a twist to the original with a nice buttery citrus tomato flavor. Using vermicelli is one of the most common ways of cooking not only in the Middle East but all over the word. It's a delicious or even better substitute than rice.

INGREDIENTS

  • 1/2 cup vermicelli (thin spaghetti)
  • 4 cups water
  • 2 tablespoons butter
  • 2 chicken stock cubes
  • 1/2 teaspoon dried mint leaves, crushed
  • 2 tablespoons tomato paste
  • 2 tablespoons fresh parsley, chopped

PREPARATION

  1. Place a large pot, over high heat, bring water to a boil then add butter, chicken stock, crushed mint, tomato paste, and parsley, stir well.
  2. Add vermicelli to pot and stir well for 2 minuets.
  3. Cover and remove pot from heat and let it sit for 15 minuets until vermicelli is well cooked before serving.
  4. Ladle soup into bowls and serve.
