This soup is a filling colorful vegetable combination great for anytime during the year especially if you need something to warm you up on a chilly day. This makes for a flavorful lunch or an excellent addition to fresh bread and green salad for dinner.

INGREDIENTS

  • 1 medium potato, chopped into cubes
  • 2 medium carrots, chopped into cubes
  • 1 small bell pepper, thinly sliced or 1/2 inch-dice
  • 1/4 cup green peas
  • 1/4 cup green beans, chopped
  • 1/4 cup chick-peas, cooked
  • 1 medium tomatoes, diced
  • 1 medium onion, chopped
  • 1/4 cup white beans, cooked
  • 1/4 cup broccoli, chopped (optional)
  • 1 tablespoon olive oil
  • 3 chicken stock cubes
  • 2 cups water
  • 1/2 teaspoon chili pepper

PREPARATION

  1. Place a large pot over medium-high heat and pour in the olive oil, then add carrots, green beans, green peas, bell pepper, and season with salt, cook until tender.
  2. Add in water and chicken stock, season with chili pepper and simmer for 15 minuets.
  3. Add potatoes, tomatoes, and broccoli, simmer for another 15 minuets.
  4. Add the chick-peas and white beans, cook for a few more minuets, stir well.
  5. Ladle in bowls and enjoy.
