INGREDIENTS
3 cups of Basmati rice (half-cooked in salted water )
½ kilo boneless beef
3 medium potatoes (boiled,peeled , cut into chunks )
1 big onion, sliced
1 teaspoon ginger/garlic mixture
3 teaspoon vegetable oil
¼ teaspoon of each ,yellow powder, powdered clove
5 cardamoms (split)
2 cinnamon sticks
½ teaspoon powdered turmeric
2 tablespoons powdered cumin
Salt & black pepper
1 teaspoon of saffron strands (jaffran) soaked in ½ cup of flower water
1 cup of pistachio , soaked in water and roasted
1 cup of roasted cashew
1 cup of roasted almond
PREPARATION
Cut the boneless beef into medium sized pieces , then fry it in vegetables oil.
Add the onions , ginger/garlic mixture ,yellow powder, powdered clove, cardamoms, cinnamon sticks, powdered turmeric ,cumin , salt and black pepper, mix carefully .
Add ½ cup of water , the boiled potatoes , half the portion of the nuts , mix , then leave it for 15-25 minutes .
In a large pot, put half the portion of the rice , top with the beef - potatoes mixture , cover it with the remaining of the rice then, pour the saffron and flower water over the rice .
Cover tightly and simmer till all moisture evaporates and rice is cooked through.
Serve hot, decorated with the remaining amount of the nuts .
