Bhindi is called as Okra (American English) is also known as Lady’s Finger (British English).

INGREDIENTS

  • Good amount of Bhindi (according to how many people u have to feed)
  • 3 large onions (sliced)
  • 2 large tomatoes (cut in fours)
  • Salt to taste
  • 1 teaspoon red chili pepper
  • Pinch of turmeric
  • 1 tablespoon chopped garlic
  • Parsley flakes

PREPARATION

  1. Wash and cut bhindi into halves
  2. In a large pot, heat good amount of oil, you have to basically deep fry the bhindi.
  3. Add your bhindi in the heated oil and let it get a dark color from its original color (don’t burn it)
  4. After its fried and has a dark brownish color, take it out in a bowl ( take the extra oil out too)
  5. Now sauté the sliced onions, in normal amount of oil until light golden brown color.
  6. Add the bhindi with the onions and cook for 2 mins.
  7. Add all your ingredients, and let it cook for another 2 or 3 minutes.
  8. Now add the tomatoes and cook on med heat, you don’t want the bhindi to stick on the bottom of the pot.
  9. Once the tomatoes have let out their juices and have softened up, mix I last time.
  10. Add your fresh parsley on top and you are done..
