If you can't find Tunisian brik wraps you can use filo or jufka dough instead. You can also use whatever you like for filling, but here's a classic recipe

INGREDIENTS

  • Boiled potatoes, mashed (add a little olive oil to avoid dryness)
  • Tinned tuna, well drained
  • Grated cheese
  • Parsley
  • A little harissa
  • Capers (optional)
  • Salt, pepper
  • Eggs

PREPARATION

  1. Mix the ingredients for the filling. Place a dollop on a brik leaf. Wrap or fold. Either fry in plenty of oil in a frying pan or brush the briks with oil and place in oven, 225 degrees Celsius. Turn them once. When the briks are golden brown - within a few minutes - they're done. Serve with lemon.
