Arabian Soup

We break our fast with this soup - and dates- in Ramadan. Sincce I use lamb it does take a long time to cook but use leftover meat, chicken, sausage or what you wish or exclude the meat, if you want it to cook more quickly.

INGREDIENTS

  • Meat of your choice - only a little is needed, a morsel or two per serving is enough
  • 2-2.5 dl chorba or risoni - those pasta grains that look like rice
  • 0.5-1 dl yellow lentils.
  • 1/2 onion, chopped
  • 1 clove garlic, finely chopped
  • 1.5-2 litres water
  • 2-3 tablespoons tomato paste
  • Salt
  • Pepper
  • Bay leaf
  • Thyme
  • Harissa if desired, I use 1-2 dessertspoons full
  • Parsley, chopped.

PREPARATION

  1. Brown meat in a skillet. "Sweat" onions (don't let them brown).
  2. Add tomato paste and boiling water.
  3. Add seasoning and let boil on medium heat for 1.5-2 hours.
  4. Add the lentils and chorba when only a few minutes remain - the lentils I use need about 10 minutes and the chorba about 6 minutes. You can also use burghul instead of chorba for a change.
  5. Sprinkle parsley on top and serve.
