When kids hear the word cowpeas, it gives them a cow, doesn't it? But with this recipe having your kids eat the cowpeas is no longer a problem, cause the cowpeas will simply tasty. Instead of you begging them to eat them they will beg you to cook them.

INGREDIENTS

  • 1 cup of green cowpeas, cutted into small pieces
  • 2 tablespoons of olive oil.
  • 1 medium chopped onion
  • 2 medium tomatoes, peeled and diced
  • 1 teaspoon of ginger powder
  • 1/4 cup of water
  • salt and pepper to taste

PREPARATION

  1. Heat olive oil in a medium pot and sauté onion over low heat until tender.
  2. Add cowpeas stirring well then cover the pot and leave it to cook for 5 minutes.
  3. Add tomatoes, water, salt, peper and ginger stirring well and leave them to cook for ten minutes.
  4. Pour the cowpeas into serving plate and serve right away.
