Caesar salad variation topped with grilled chicken.

INGREDIENTS

  • 2 boneless, skinless chicken breasts, broiled or grilled (you can marinate the chicken with - olive oil, salt, pepper, lemon juice)
  • 12 cups chopped roamaine lettuce
  • 1/2 cup fresh parmesan cheese, grated
  • 1/2 cup Caesar Salad dressing
  • 1 cup seasoned croutons

PREPARATION

  1. While chicken is in the broiler or on the grill,
  2. chop the lettuce and arrange it in a large bowl.
  3. Sprinkle Parmesan cheese over lettuce and toss lightly.
  4. Cool chicken and cut into bite-sized pieces. Add to lettuce and toss again.
  5. Drizzle salad dressing over the salad mixture and top with crouton.
