Hummus

There is no hard & fast rule to this dish. Adjust to suit your taste. I sprinkled powdered Sumac over the top. Sumac has a tart flavor that goes well with grills, salad & is available at the many Iranian mini marts around Ampang. Try it and enjoy!

INGREDIENTS

  • 1 canned chickpeas
  • 3-4 tbsp. Tahini (sesame seed paste)
  • 3 cloves garlic, bruised
  • 1 tsp roasted ground cumin
  • Juice from 1 lemon juice
  • Salt & pepper to taste

PREPARATION

  1. Drain & peel the chickpeas, reserving the juice. Place in a food processor, add the lemon juice & some of the liquid from the chickpeas. Process to a smooth paste, adding more liquid to get the desired consistency. Transfer to a bowl & add tahini, garlic, cumin, salt & pepper. Mix well. Check seasonings, adjusting where necessary. Place on platter & drizzle olive oil over & place a sprig of parsley in the middle. Serve with pita bread wedges.

NOTICE

I've served hummus with homemade tortillas & it was great.
