Lemon Cheesecake

Lemon cheesecake recipe is really tangy and creamy totally indulgent cheesecake. You can change the flavor of the cheesecake to chocolate easily by swapping out the lemon for 3 tablespoons of chocolate powder and leaving out the glaze. As in the photo.

INGREDIENTS

  • 8oz digestive biscuits
  • 3 tablespoon butter (melted)
  • 3 tablespoon sugar
  • 800gram cream cheese
  • 1 cup sugar
  • 3 tablespoon flour
  • Rind of 2 lemons
  • juice of 1 lemon
  • 3 eggs
  • 3/4 cup sugar
  • 2 tablespoon cornflour
  • 1/2 cup water
  • Juice of 1 lemon

PREPARATION

  1. To Make Base:- crush biscuits, blend in sugar and butter. Press into a glass pie dish and chill.
  2. To Make Filling:- beat all together until smooth, pour into prepared dish. Bake at 150c for 45 - 50 minutes or untill just set, this needs to be watched carefully as the base will swell during the baking and will burn if the oven temp. is to high.
  3. To Make Glaze:- While pie is baking, blend altogether, heat gently until clear and thickened. Pour over baked hot pie, allow to cool.
  4. Chill until ready to serve.

I love Lemon Cheesecake, I used to use another way without need baking cuz there is no eggs. but this seems so interesting and yummmi
