The candy in this picture was flavored with an exotic juice, mainly consisting of orange and pineapple. You might want to make smaller pieces than I did. Don't forget that while this candy is made very quickly it needs several days to set properly!

INGREDIENTS
2 dl juice, undiluted!
3,5-4 dl water
1 bag pektin (or pectine perhaps)
5 dl sugar
If you like, colouring (none was used for the candy in the photo)
PREPARATION
Boil water and juice in a pot. Mix the pektin with 1/2 dl of the sugar and whisk it into the liquid. Boil vigorously for 1 minute. Whisk the rest of the sugar into the liquid and let boil for a few minutes to make sure the sugar dissolves. Add food colouring if desired, just a few drops will do.
Pour into a dish with straight edges (not a round one), measuring about 20*30 cm. Leave to set for 2-3 hours.
Cut marmalade into pieces with a knife or cookie cutters. Roll pieces in sugar (yes you might think you already used enough sugar but they will all become one big lump if you neglect this) and place on a baking sheet on a tray. Leave to dry for a few days at room temperature. Turn the pieces over a few times during that time. Store in a jar with grease proof paper between layers.
