Mushroom soup is tasty and will warm you up in winter

INGREDIENTS

  • 400-500 grams (just under 1 lb, up to 1 lb) fresh mushrooms, brushed and sliced
  • 1 litre (1 quart) milk, possibly more
  • 5 cm (2 inches) piece of leek, finely chopped, or onion
  • Salt, pepper, tabasco
  • Parsley for garnishing

PREPARATION

  1. Melt some butter in a skillet. Add mushrooms and let them fry until they have given off their liquid. Add a little more butter if you like and some salt. Let fry for a few minutes. Reserve a few nice slices for serving. Add milk and bring to a boil while stirring. Let simmer for a few minutes. Take skillet from heat and blend the soup until it's puree-like. Put back on heat and let simmer for a few more minutes. Add some more milk if needed and season to taste.
  2. Garnish with some parsley and the reserved mushroom slices - then serve quickly before the slices sink...
