Poached Salmon with Lemon & Dill

INGREDIENTS

  • salmon fillets, skinless
  • Poaching liquid (or fish Bouillon):
  • 1 medium onion, sliced
  • 1 lemon, sliced
  • Dill weeds sprigs
  • 3 allspice corns
  • 4 pepper corns
  • Salt & peppers

PREPARATION

  1. Add the salmon, sliced onion, lemon slices and dill weeds to a pot. Add water or stock with allspice and pepper corns . Bring to boil then reduce the heat and simmer for the fillet 7 or 8 minutes. I used a special poaching fish kettle.
