Red Rice with Fish

Malaysian Tomato Rice & Austrian Fish

An intermixed recipe. Malaysian tomato rice, which well known in Malaysia and Austrian fish, they love to cook meat, chicken and fish using bread crumbs, i just modified the taste of the fish with spices before frying it to give a taste to the fish flesh.

INGREDIENTS

  • (A)
  • 3 fish fillet - (any white fish will do, I use pangasius)
  • 1 teaspoon cumin powder
  • 1 teaspoon conriader powder
  • 1 teaspoon garlic powder
  • chili powder - a dash (omit if you dont like chili)
  • black pepper - a dash
  • salt to taste
  • (B)
  • 1 egg - beaten )
  • 3 tablespoon milk ) beaten together
  • bread crumbs
  • all purpose flour
  • Cooking oil for frying
  • (c)
  • Rice - wash and drain
  • 1 Onion - diced
  • 1 tablespoon cooking oil
  • Tomato puree (depend how red you like the rice)
  • water
  • salt
  • black pepper
  • cardamon

PREPARATION

  1. For Rice:- 1. Wash the rice and drain the water. Heat the oil in the cooking pot. 2. When the oil is hot, add the diced onion and two cardamon and when the onion is golden brown, add the drained rice. Stir for 3 minutes and add tomato puree and mix well. Add water according to the amount of the rice, salt and leave it to boil and dont forget to stir it. Cook on medium low fire. 3. When the rice is almost dry, stir well and then cover it. If possible, you may have a steel plate at the bottom of the pot so that it will not burn (if cooking rice on a stove). After 10 minutes, stir again and cover it. Low the fire. Again after 15 minutes, stir the rice and check to see if it is already cook. If the rice is cooked, off the fire.
  2. For Fish:- 1. Mix all ingredients A and leave it marinated for 35 - 40 minutes. 2. Beat egg with milk and leave aside. 3. Put your bread crumbs and flour in different plate or paper. 4. Heat the oil. 5. When the fish is ready coated the fish inside the flour and then into the beaten egg and then to the bread crumbs and fry it. 6. Fried it on slow fire so that it turn beautiful brown and the flesh is cooked inside. When both side is nicely brown take it and drain on plate with paper towel.
  3. Serve the rice and the fish together, slice of lemon and green salad if you want. Enjoy!

NOTICE

Notes:

1. You may add dill inside the rice if you wish with the tomato puree. I didnt add coz I didnt have at the time of cooking.

2. Adding tomato puree is according how red do you like your rice. I love my rice red so I add more.

3. The amount of the rice is according to your usual rice cooking and the same withwater. Put less water if you add more of tomato puree, later on you could add water if needed according to your rice.

4. I used pangasius fish since it is easy to get here and I like the light taste of it.

5. You may use water instead of milk for the fish but i prefer milk.
