Rice pudding made with coconut milk and topped with toasted coconut

INGREDIENTS
1/3 cup white rice
14 oz can of coconut milk (not cream)
1 ½ cup milk
1/3 cup sugar
2 tsp. lime zest
1/8 sal
PREPARATION
in a small sauce pan sock rice with 2/3 cold water for 30 min. Drain rice.
In a medium saucepan bring coconut milk, milk, rice sugar, salt to boil. Reduce heat to low, and simmer for about 40-45 minutes stirring occasionally. It should have cooked down to a creamy mixture.
Remove from the heat and stir lime zest. Pour in small dishes. Toast shredded coconut for few minutes till colour turn to slightly golden and top the pudding.
