Roasted Goose

INGREDIENTS

  • 2 teaspoons salt
  • 2 teaspoons paprika
  • 1 teaspoon black pepper
  • 1 (5 pound) whole goose (i use wild canadian goose , if not avalable could be a duck if you like and follow the same steps :))
  • All spice , anise star cardamom , bayleaf, white pepper Cinnamon,ginger
  • 2 tsp honey
  • Potatoes , and onions

PREPARATION

  1. As always , we need the goose or duck to be clean and tenderized in marinade, so befoehand , add all ingredients except for onions and potatoes , rub the goose or duck and leave it for an overnight in the firdge , cover it with foil
  2. Next day ,slice yr onions ( we need like 4-5 big onions ) and cover the duck with the onion slices and make sure that its covered ,leave it for a couple of hours before you through a good whole bunch of baby potatoes and get it ready to cook .
  3. Preheat oven to 375 degrees F (190 degrees C).
  4. Place in a roasting pan.
  5. Roast the bird in preheated oven for 1 hour. leave it to cook till its somewhat tender in foil cover , then continue cooking for 45 more minutes uncovered to get the roasting glow . depends on the size of the bird u may need extra 15 min or so , or until golden brown.
