Salmon With Dill Sauce

Salmon fillet with lemon and dill sauce is fascinating

INGREDIENTS

  • 4 salmon fillets
  • 1 garlic finely minced
  • 2 tbs chopped dill weeds
  • Juice of one lemon
  • 2 cups of chicken stock
  • 2 tbs corn flour or regular flour
  • 3 tbs olive oil
  • Freshly ground pepper

PREPARATION

  1. Heat oil in a large pan, dip the salmon fillets in the corn flour on both sides and shake excess flour from it. Add the salmon to the heated oil and brown then on both sides. Remove the salmon from the pan, add the minced garlic to the pan and cook for few seconds. Add the chicken stock and lemon juice, let boil on medium heat. To thicken the sauce use the rest of the flour mixed with little of cold water then add it to to the boiling stock mixing well to blend. Strain the sauce through a sieve to get a pure silky sauce. Return the sauce to the pan adding the salmon back with the chopped dill let the fish cook in the sauce for 10 minutes.
