Saudi Kabsa is a family of rice dishes that are served mostly in Saudi Arabia, and the other Arab countries.

INGREDIENTS

  • One chicken, 4 pieces
  • 3 cup of rice
  • 6 tablespoon of oil
  • 3 big onions, sliced
  • 3 big tomatos, chopped
  • ¼ cup tomato pest
  • 4 teaspoon salt
  • Black peper for taste
  • Few small cinnamon sticks
  • 6-8 pieces of cardamom
  • Chechen or lam meat
  • 3 teaspoon masala
  • 4 cups of water

PREPARATION

  1. Wash the rice and sock it for 40 min
  2. Fry the onion until it terns into golden brown then set aside.
  3. Fry the chicken for 4 min then add the fried onion, chopped tomato, cardamom, cinnamon, tomato paste, water and masala then cover the pot for 40 min
  4. After that add rice over the chicken but you should notic that the soup should cover the rice with about 1cm height.
  5. Reduce the heat and cover it for another 30 min
