Mix flour and salt. Add half of the milk and whisk until all lumps are gone. Add the rest of the milk and whisk until smooth. Add the eggs. For best results, leave the batter for at least 30 minutes or even overnight (in fridge!). I also find I get the best results when using a cast iron frying pan. Add 1-2 tablespoons melted butter (or oil, not olive though) to the batter and you won't have to add so much butter when frying. Fry at medium heat, adding just a little batter at a time. Fry for a couple of minutes on each side or until golden brown. Serve with for instance jam, ice cream or applesauce. I actually like mine plain.
