Tunisian Tagine with Malsouka

INGREDIENTS

  • Malsouka/brik leaves
  • 8-9 eggs, raw
  • 7 medium potatoes, boiled and mashed
  • 3 tins tuna in oil, drained
  • Shredded cheese
  • Chopped parsley
  • Harissa
  • Salt, pepper, turmeric

PREPARATION

  1. Mix all the ingredients except the malsouka and some of the cheese. Grease an oven-proof tin and place one layer of malsouka, then some of the egg mixture, then more malsouka and so on until finished. Make sure to finish with a layer of malsouka. Sprinkle remaining cheese on top. Bake in oven at 225 degrees Celsius for 20- 30 minutes. Serve with lemon wedges and a nice salad.

how much cheese do u put and how much parsly and harissa

 Hmm, I put perhaps a heaped dessert spoon of harissa, but if you're not a big fan of it 1/2-1 teaspoon might do. Chopped parsley, 1/2-1 deciliter and cheese, perhaps 2 deciliters? But you can indeed be generous there ;-)
