INGREDIENTS
1 1/2 cup dry wheatberries
1 cup fava beans skin removed
1/4 cup choppe roasted red peppers
1 medium tomato finely chopped
1-2 small cucumber chopped
3 green onion chopped
3 tablespoon chopped parsley
1/3 cup lemon juice
2 tablespoon olive oil
1 teaspoon cumin powder
salt and feshly ground pepper
PREPARATION
In a large pot combine the wheat berries and enough water to come 2 inches over the wheat berries. Bring to a boil and cook uncovered for 1 hour, or until tender. Strain the wheat and cool. Mix the remaining ingredients and adjust the dressing to your preference.
