INGREDIENTS
- 1 small tomato, diced
- 2 garlic cloves, chopped
- 1 tablespoon of olive oil
- 1 can of broad beans (400g)
- Fresh parsley for garnish
PREPARATION
- Open the broad beans can and place it over low heat for few minutes until the beans are cooked.
- Meanwhile heat olive oil in a frying pan then add garlic, stir until golden brown.
- Add tomatoes to the frying pan and cook over medium heat until tomatoes are almost done.
- Drain beans and add them to the pan mixing all together and cook again for several minutes.
- Pour the cooked meal into a serving plate and sprinkle with olive oil.
- Garnish with parsley and serve.
