The only thing better than delicious food, is delicious food that's good for you. Preparing this wheat and veggie salad in stages, as opposed to tossing all the ingredients at once, is the key to creating the tangy and grainy flavor of this dish.

INGREDIENTS
- 1 cup fine bulgur wheat
- 2/3 cup water
- 1 medium onion, finely chopped
- 2 tablespoons fresh lemon juice
- 2 grapevine leaves, thoroughly cleaned
- 1 small tomato, diced for garnish
- 2 pickles, sliced for garnish
- Salt (optional)
PREPARATION
- Boil water, pour in a bowl, and soak in bulgur wheat. Cover bowl and set for 15 minuets.
- Drain bulgur wheat and add onion and lemon juice, mix well.
- Line a plate with grapevine leaves and pour bulgur wheat mixture on top.
- Garnish with tomatoes and pickles.
- Refrigerate and serve cold.
