INGREDIENTS
- 1 cup dried yellow lentils, rinsed well
- 1 medium carrot, chopped into cubes
- 1 medium potato, chopped into cubes
- 1 medium tomato, diced
- 1 medium onion, chopped
- 2 cloves garlic, sliced
- 2 tablespoons butter
- 1 teaspoon cumin
- 1 chicken stock cube
- 1/4 teaspoon chili pepper
- 4 cups water
- 1/4 teaspoon salt
PREPARATION
- In a large pot pour in water and bring to a boil, then add in lentils, carrots, potatoes, tomatoes, onions and garlic over high heat for 25 minuets, sir well.
- While the soup boils add in butter, cumin, and chicken stock, season with chili pepper and salt, stir well for another 5 minutes.
- Ladle into bowls and serve hot.
