INGREDIENTS
- 1 medium green bell pepper, thinly sliced or 1/2 inch-dice
- 2 medium tomatoes, diced
- 3 cloves garlic, finely chopped
- 2 tablespoons olive oil
- 1 tablespoon fresh coriander (cilantro) leaves, chopped
- 1/2 teaspoon salt
- Pinch of chili pepper
PREPARATION
- Heat olive oil in a skillet then add garlic and bell pepper, simmer for 2 minuets.
- Add tomatoes, olive oil, coriander, salt, and chili pepper into the skillet, cook over medium heat for about 18 minuets.
- Serve immediately.
