INGREDIENTS
- 1 medium tomato, diced
- 1 medium green bell pepper, thinly sliced or 1/2 inch-dice
- 1 medium cucumber, diced into bite-size pieces
- 1 small lemon, chopped
- 1/2 cup scallions
- 1/2 cup cabbage, shredded
- 1/2 cup red cabbage, shredded
- 1 tablespoon olive oil
- Pinch of black pepper
- Salt (optional)
PREPARATION
- Combine tomato, bell pepper, cucumber, lemon, scallions, olive oil, cabbage, and red cabbage in a bowl and season with salt and pepper.
- Toss salad and adjust seasoning before serving.
