Here we have a very delicious recipe for eggplants. It is a side dish recipe which can be served with any meal, breakfast, lunch, dinner or simply as a snack between meals. It is easy to prepare and won't take much time from you. You have my word on it.

INGREDIENTS
- 1 large eggplant.
- 1 cup of plain yogurt.
- 3 tablespoons of Tahina***.
- 3 tablespoons of olive oil.
- salt to taste
PREPARATION
- Cut of the top of the eggplant (the green part) and then wound it in three different places, but leaving it as a whole. Then grill it in oven
- Take eggplant out and leave it to cool then peel it and mash it in a bowl. Add yogurt, tahina, olive oil, salt mixing all together
- Pour the eggplant mixture into serving plate and garnish with olive oil and parsley.
- Serve right away.
NOTICE
***Tahina is a thick paste made from ground sesame seeds.
