
Potato Coriander

This tasty potato side dish is perfect to serve for lunch or dinner and also makes for a complete meal suitable for company when served with any kind of salad. The coriander-lemon combination is a delicious twist to this simple Middle Eastern dish.

INGREDIENTS
- 3 Potato , small size
- 1 Teaspoons lemon juice
- 1/2 cup fresh coriander (cilantro) leaves, chopped
- 3 Teaspoons olive oil
- 1 Garlic clove , crushed
- salt (optional)
- water
PREPARATION
- Place potatoes into a large pot and cover with water, bring to a boil and cook over high heat for 35 minuets.
- Drain water then peel and dice potatoes.
- Combine diced potatoes with lemon juice, coriander, olive oil, garlic, and salt. Place in a skillet and cook for about 20 minuets over moderate heat, stir well.
- Serve and enjoy.
