Here's some comfort food that you can make in less than an hour. A plate of rice is more than just a side dish to accompany a meal, but a fantastic main ingredient. This rice soup is all about flavor which is all it takes to make this a filling meal.

INGREDIENTS
- 1/4 cup rice
- 1 medium onion, chopped
- 1 tablespoon olive oil
- 2 chicken stock cubes
- 1/4 teaspoon chili pepper
- 1/2 teaspoon cinnamon
- 4 cups water
- Hand full of fresh parsley, for garnishing
PREPARATION
- Place a large pot over medium-high heat and pour in the olive oil, then add onions and cook until tender.
- Add water and bring to a boil then add in chicken stock and season with chili pepper and cinnamon, let boil for a few more minuets.
- Add in rice, stir occasionally.
- Ladle soup into bowls and garnish with parsley.
