
Tabbouleh Salad

Here is a very simple to make salad that makes for a delicious lunch on its own. This popular dish is a zesty combination of vegetables, grain, and herbs with a decidedly traditional dressing that can go with almost any other kind of vegetable salad.

INGREDIENTS
- 1/2 cup fine bulgur wheat
- 1 medium tomato, seeded and diced
- 2 medium cucumbers, chopped
- 2 cups fresh parsley, chopped
- 1/2 small head lettuce, chopped
- 1/3 cup fresh mint leaves, chopped
- 1/2 cup lemon juice
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 2/3 cup water
PREPARATION
- Boil water, pour into a bowl, and soak in bulgur wheat. Cover bowl and set for 25-30 minutes.
- Drain bulgur wheat and add tomatoes, cucumbers, parsley, lettuce, and mint leaves.
- Drizzle veggies with lemon juice and olive oil, season with salt.
- Serve immediately or refrigerate and serve cold.
