A Tamagoyaki or dashimaki recipe is a type of a Japanese omelette. It is often served as a Japanese breakfast dish. Some are sweet or salty, but there are many different types of this recipe. They are usually cooked in a rectangular omelette pan.

INGREDIENTS
- 4 large eggs
- 1 tbsp sugar
- 1 tsp mirin (if you can't find it, omit it)
- 1/4 tsp salt
- 1/2 tsp soy sauce
- vegetable oil
- frying pan (the smaller the better)
- a bamboo sushi mat or a stack of paper towels (3 or 4)
PREPARATION
- Combine eggs, sugar, mirin, salt and soy sauce in a bowl. Heat the pan to medium-low, scrambled egg heat. Ranges need real temperatures
- Pour 1/4 to 1/5 of the egg mixture into the pan. When the egg is just set, roll it to the other side of the pan.
- Fill the pan with another 1/4 to 1/5 of the egg mixture, making sure that it gets under and around the egg roll. You want this layer to stick to the previous.
- What that layer is just set, roll the egg back towards you. I cooked it too much right here if you can tell
- Repeat until you use all of the egg mixture. When you do, remove the egg roll from the pan and place it on a sushi mat or stack of paper towels. Roll it up so it retains its shape, then let sit to cool.
- When it's cool, cut into 1'' slices. Stick it in a bento for later OR EAT.
