A Tamagoyaki or dashimaki recipe is a type of a Japanese omelette. It is often served as a Japanese breakfast dish. Some are sweet or salty, but there are many different types of this recipe. They are usually cooked in a rectangular omelette pan.

PREPARATION

  1. Combine eggs, sugar, mirin, salt and soy sauce in a bowl. Heat the pan to medium-low, scrambled egg heat. Ranges need real temperatures
  2. Pour 1/4 to 1/5 of the egg mixture into the pan. When the egg is just set, roll it to the other side of the pan.
  3. Fill the pan with another 1/4 to 1/5 of the egg mixture, making sure that it gets under and around the egg roll. You want this layer to stick to the previous.
  4. What that layer is just set, roll the egg back towards you. I cooked it too much right here if you can tell
  5. Repeat until you use all of the egg mixture. When you do, remove the egg roll from the pan and place it on a sushi mat or stack of paper towels. Roll it up so it retains its shape, then let sit to cool.
  6. When it's cool, cut into 1'' slices. Stick it in a bento for later OR EAT.
