
Turkish Vermicelli Soup

This vermicelli soup is a twist to the original with a nice buttery citrus tomato flavor. Using vermicelli is one of the most common ways of cooking not only in the Middle East but all over the word. It's a delicious or even better substitute than rice.

INGREDIENTS
- 1/2 cup vermicelli (thin spaghetti)
- 4 cups water
- 2 tablespoons butter
- 2 chicken stock cubes
- 1/2 teaspoon dried mint leaves, crushed
- 2 tablespoons tomato paste
- 2 tablespoons fresh parsley, chopped
PREPARATION
- Place a large pot, over high heat, bring water to a boil then add butter, chicken stock, crushed mint, tomato paste, and parsley, stir well.
- Add vermicelli to pot and stir well for 2 minuets.
- Cover and remove pot from heat and let it sit for 15 minuets until vermicelli is well cooked before serving.
- Ladle soup into bowls and serve.
