This soup is a filling colorful vegetable combination great for anytime during the year especially if you need something to warm you up on a chilly day. This makes for a flavorful lunch or an excellent addition to fresh bread and green salad for dinner.

INGREDIENTS
- 1 medium potato, chopped into cubes
- 2 medium carrots, chopped into cubes
- 1 small bell pepper, thinly sliced or 1/2 inch-dice
- 1/4 cup green peas
- 1/4 cup green beans, chopped
- 1/4 cup chick-peas, cooked
- 1 medium tomatoes, diced
- 1 medium onion, chopped
- 1/4 cup white beans, cooked
- 1/4 cup broccoli, chopped (optional)
- 1 tablespoon olive oil
- 3 chicken stock cubes
- 2 cups water
- 1/2 teaspoon chili pepper
PREPARATION
- Place a large pot over medium-high heat and pour in the olive oil, then add carrots, green beans, green peas, bell pepper, and season with salt, cook until tender.
- Add in water and chicken stock, season with chili pepper and simmer for 15 minuets.
- Add potatoes, tomatoes, and broccoli, simmer for another 15 minuets.
- Add the chick-peas and white beans, cook for a few more minuets, stir well.
- Ladle in bowls and enjoy.
