Halawet Eljeben is originally a Lebanese dessert; this recipe is registered to Tripoli. It can be prepared in different ways; you may layer the dough over syrup and stuffed with cream, or pour it down and cover with cream, rose water and crushed pistachio

INGREDIENTS
- 1 1/2 cup semolina
- 150g butter
- 400g mozzarella cheese, grated
- 4 tablespoon rose water
- 1 can of cream (170g)
- Crushed pistachio for garnish
- Hot syrup (1 1/2 cup sugar+1 1/2 cup water+teaspoon lemon juice+1 tablespoon rose water)
PREPARATION
- Preparing syrup:- In a cooking pot add 1 1/2 cup of sugar, 1 teaspoon of lemon juice and 1 1/2 cup of water stirring well and bring to boil over moderate heat until the sugar is fully melted, Turn of the heat and added 1 tablespoon of rose water then set the syrup aside.
- In a deep skillet melt down butter and sauté semolina for 5 minutes. Place the syrup pot again over medium heat, add fried semolina to the pot and stir for few seconds.
- Add grated cheese stirring well intensively and continuously to make sticking dough. Add rose water and cream, keep stirring well continuously.
- Pour the dessert into flat plate and garnish with pistachio, serve immediately.
