INGREDIENTS
- 1 tablespoons OO (Olive oil)
- 2 chopped onion
- 4 carrot - chopped into cube
- 3/4 cup chopped celery
- 2 cups extra knacking sweetcorns
- 1 bell pepper (any colour) - chopped into cube
- 3 garlic cloves, minced
- 1 tablespoon white vinegar
- Water/fish stock
- 1 teaspoon dried thyme
- 1 teaspoon Majoram
- 1 teaspoon sugar
- Salt to taste
- Black pepper
- 1 can diced tomatoes, undrained
- 1 bay leaf
- 3 pieces pangasius fillets, cut into 1-inch pieces
- 5 pieces tiger prawn - cleaned and scaled
PREPARATION
- Heat Olive Oil in a pot over medium-high heat. Add onion, carrot, bell pepper, sweetcorn, celery, and garlic to pot, sauté 10 minutes. Stir in diced tomatoes; cook 1 minute. Stir in the fish stock or water and white vinegar, salt, black pepper, bay leaf, thyme, majoram and bring to a boil. Reduce heat; simmer 30 minutes.
- Add fish and shrimp. Cover and simmer 10 minutes or until fish flakes easily when tested with a fork. Discard bay leaf.

Notes for Manhattan-Style Seafood Chowder:
You can use any firm whitefish in this classic tomato-based soup.
You may use any vegies for this soup.
