Raspberry Cheesecake

Raspberry Cheesecake is mouthwatering recipe, impress your guests!

SPECIFICATIONS

PREPARATION

  1. Crumble biscuits in blender. Melt butter and mix with biscuit crumble. Place in mould with detachable bottom (approx 24 cms across) and make sure the mixture reaches about 2 cms up on the sides. Place cold for about 15 minutes.
  2. Bake in 175 degrees Celsius for about 10 minutes. Let cool.
  3. Whisk eggs and sugar until "fluffy". Add juice, zest, cream cheese and vanilla sugar. Mix until smooth.
  4. Add raspberries. Pour into crust. Place in freezer, minimum 3 hours. Remove from freezer about 20 minutes before serving.
  5. Garnish as you like, I made chocolate decorations for this one but as I made them at home and served them elsewhere, well, the decorations were not so beautiful when I got there... so I just broke them up and put them on top of the cheesecakes.
