INGREDIENTS
- 1 can of red beans, washed
- 1 small can of corn (145g), washed
- 1 small tomato, diced
- 1 small onion, chopped
- 1 medium yellow bell pepper, diced
- 1 medium red bell pepper, diced
- 2 tablespoons olive oil
- 1 teaspoon Salt
- 1 teaspoon vinegar
- 1 teaspoon cumin
- 1/4 teaspoon black pepper
- Olives for garnish
PREPARATION
- Combine red beans, corn, tomato, onion and bell pepper in a salad bowl.
- Add olive oil, vinegar, cumin, black pepper and salt over salad and toss well to combine.
- Garnish salad with olives and serve immediately or refrigerate and serve cold.
